AKA: Agaricus Bisporus. Two brown colored strains developed from the common white mushroom; the Portabella and the Crimini. They are the same mushroom, the only difference is the stage to which they are allow to grow. Crimini are picked very young with closed gills, and Portobello are harvested later with full open caps. The naturally dark cap ranges in color from light tan to brown. Meaty and earthy, Portabellas are excellent when marinated then cooked, Crimini are great to saut_. Flavor is deeper, denser, and more earthy than White Agaricus. They may be used raw or cooked.
